When the kids are getting bored with their breakfast choices, there’s always peanut butter quesadillas! For my family, peanut butter is not an option on weekdays, during the school year. It’s too risky with the severity of peanut allergies in my daughter’s class. So I would rather be safe, than sorry. We keep peanut butter for weekends and summer holidays.
Guess what time of the year it is? Yesssss! It’s summer holidays.
This is the thing my daughter will want in the morning and I love that. It’s healthy and it looks ooey gooey yummy! Here’s the trick to adding lots of extra nutrition to the peanut butter quesadilla, add in lots of fruit and a glass of milk.
What’s not nutritious about whole grains, dairy, fruit and nut butter? Nothing. Unless, you’re allergic to one of the ingredients and then I suggest for dairy-free options you can use almond milk. For my peanut free parents, this quesadilla is just as tasty with Wow Butter or alternative. Use a gluten-free wrap if you or your kids are celiac.

Here’s what you need to make Peanut Butter Quesadillas:
- a whole grain wrap
- 2 tablespoons of natural chunky peanut butter (or alternative)
- 1/2 a banana (for the quesadilla)
- berries and orange slices (the other half of banana)
- a glass of milk
First, you will need to preheat the skillet on medium heat. While the pan is heating up, butter a whole grain tortilla wrap with all natural (that means there’s no sugar added) crunchy peanut butter. Layer on thinly sliced bananas, about half of it. See the notes for the proper way to cut a banana to save the other half.
Fold the tortilla in half like a typical quesadilla and grill in the heated skillet (I do not use any fat for the pan, I use a non stick pan). Grill until the outside of the tortilla is golden brown and flip it over. Continue to cook until this side is golden.
Tip: when you are using bananas in a dish and you only need half (as I did here), cut the banana in half with the peel on. Then the other half won’t turn black. Cover the end in plastic wrap and put it in the fridge. If the end should discolor, take a knife and thinly slice the black off.
Remove the quesadilla from the skillet and cut in half. Serve it with two servings of fruit and a glass of milk. These are so easy to make and the kids will never tire of peanut butter quesadillas because there’s so many ways to make them fun. - 1 small whole grain tortilla
- 1 banana
- 3 strawberries
- 1 small orange
- 2 tablespoons of all natural crunchy peanut butter
- Preheat skillet on medium heat.
- Butter a whole grain tortilla with peanut butter.
- Layer with 1/2 a thinly sliced banana.
- Fold the tortilla in half and grill.
- Once the quesadilla is golden brown, turn it over.
- Continue to cook until that side is golden.
- Cut in half and serve with milk and fruit.
