Tuna Stuffed Mashed Potato Cakes

These Tuna Stuffed Mashed Potato Cakes are so easy to make and with all the yummy good ingredients in them, the kids will be asking for more!

  1. Preheat the oven to 350° and grease a baking sheet with olive oil.
  2. In a large mixing bowl, combine the potatoes, egg, tuna and spices.
  3. Mix well.
  4. Using a tablespoon, scoop a round spoonful of the potatoe mixture into your palm.
  5. Form a patty and place on the baking sheet.  Continue until all the mixture is gone.
  6. Pop the potato cakes into the oven and cook for about 12 minutes and flip.
  7. Continue to cook for another 10 – 12 minutes or until golden brown.
  8. Serve warm with a sour cream dipping sauce and salad.

Notes

I used tuna because that’s what my kids prefer but it’s equally delicious if you make it with salmon.  One can equals about one cup, if you’re using fresh fish.
