Easy Chicken Cordon Bleu Casserole

Easy Creamy Chicken Cordon Bleu Casserole

White sauce tips: cook the roux for 2 minutes to remove the flour taste. Cook the sauce a full 10 minutes until it thickens. Taking the extra time makes a big difference in the taste of your sauce. You can substitute the seasoning salt for a pinch of regular salt, smoked paprika and garlic powder.

Ingredients

  • 1 Rotisserie chicken, cooked, deboned and cubed (5-6 cups)
  • 1/2 lb Honey ham, thinly sliced, coursely chopped
  • 1/4 lb Swiss cheese, thinly sliced
  • 4 tbsp. Butter, melted
  • 4 tbsp. Flour
  • 3/4 tsp. Salt
  • 3 c Whole milk
  • 2 tbsp. Fresh squeezed lemon juice
  • 1 tbsp. Dijon mustard
  • 1/2 tsp. Smoked paprika
  • 1/4 tsp. White pepper
  • 5 1/2 c Panko breadcrumbs
  • 4 tbsp. Butter, melted
  • 1/2 tsp. Seasoning salt
  • 5 1/2 tsp. Crushed dried parsley

Instructions

  1. Preheat oven to 350 F. Butter a 9×13-inch baking dish. Set aside.
  2. Put cooked shredded or diced chicken on the bottom of the baking dish.
  3. Layer the chopped ham over the chicken.
  4. Then layer the Swiss cheese on top of the ham.
  5. For the sauce:
  6. Melt the butter in a large sauce pot over medium heat.
  7. When butter is melted, quickly stir in the flour to form a smooth roux. Do not brown!
  8. Cook roux for 2 minutes.
  9. Once the roux is smooth and bubbly, slowly pour in the cold milk.
  10. Whisk constantly to keep the sauce smooth.
  11. Cook over medium heat.
  12. Stirring constantly until the sauce thickens (10 minutes).
  13. Stir in the lemon juice, Dijon, salt, smoked paprika and pepper. Bring sauce just back to a low boil and turn off heat.
  14. Pour sauce evenly over the casserole, being certain to get some of the sauce around the edges of the pan.
  15. For the topping:
  16. Melt the butter in the microwave in a medium sized microwaveable bowl.
  17. Heat it for 30 seconds at a time and stop once it’s melted.
  18. Take the bowl out of the microwave.
  19. Stir in the panko bread crumbs, crushed dried parsley and seasoning salt.
  20. Sprinkle over the top of the casserole.
  21. Bake casserole uncovered for 45 minutes,
  22. Until topping is golden brown.
  23. Remove from oven and allow to cool for 5-10 minutes prior to serving.
