Busy Mom’s weeknight meal ideas and all you need are 30 minutes and a skillet!
Weeknights use to be a state of mommy-brain fog for me. Mommy-brain fog is what I call the state I am in when I totally go through the evenings without taking a breathe to relax. From the time the kids came in the front door after school, until I had them tucked into bed at night, I went from one chore to another, I barely remember the evening. There was never time to enjoy a few minutes to unwind, unless it was in the late hours and by then I couldn’t keep my eyes open to enjoy anything.
Once I started to realize I didn’t have to cook an extravagant meal every night and I could make a perfectly wholesome dinner without spending hours in the kitchen, I started to have some time on my hands and guess what? I had time to catch up on some of my favorite TV shows, read a book and do a few minutes of yoga in the evening.
What type of meals did I cook that liberated me? Well, for one thing I started making recipes that contain only a few easy ingredients and I bought a big skillet. It’s that simple. I kid you not. One-pan meals or skillet meals are the best thing since sliced bread. Try them and you’ll be so happy you did. You’ll be shouting from the roof top! You’ll be giddy with happiness! Maybe not giddy but you’ll definitely be a happier you! Your family will thank you too because these meals are SO amazingly delicious and if you wonder if the kids will love them, they will!
